AVOCADO WITH HERDER’S CHEESE AND TOMATO SALAD

Ingredients

2ripe avocados
5medium-sized tomatoes
200gSirtakis herder’s cheese
40gblack olives, pitted
1 Tbs.balsamic vinegar, light
2 Tbs.olive oil
1small clove of garlic, crushed
 Basil, fresh
 Salt, sugar, freshly ground pepper

Preparation

Wash and dice the tomatoes and put in a bowl. Finely dice the herder’s cheese. Cut the basil into small pieces (do not chop!). Halve the olives. Mix the olive oil and balsamic vinegar together. Season the oil-and-vinegar mixture to taste with salt, pepper, garlic and a bit of sugar. Add all the ingredients to the bowl with the tomatoes and carefully mix together. Halve the avocados and arrange on a plate with the salad. Serves well with a freshly baked baguette.
