5 | medium-sized tomatoes |
200g | Sirtakis herder’s cheese |
40g | black olives, pitted |
1 Tbs. | balsamic vinegar, light |
2 Tbs. | olive oil |
1 | small clove of garlic, crushed |

Salt, sugar, freshly ground pepper |
Wash and dice the tomatoes and put in a bowl. Finely dice the herder’s cheese. Cut the basil into small pieces (do not chop!). Halve the olives. Mix the olive oil and balsamic vinegar together. Season the oil-and-vinegar mixture to taste with salt, pepper, garlic and a bit of sugar. Add all the ingredients to the bowl with the tomatoes and carefully mix together. Halve the avocados and arrange on a plate with the salad. Serves well with a freshly baked baguette.
